Rombauer Cabernet Sauvignon

This 2021 Atlas Peak Cabernet Sauvignon was aged for 17 months in 95–100% new French oak. Sourced entirely from Block C, Clone 685, of the 20-acre Atlas Peak Vineyard at the top of Soda Canyon Road, this 100% Cabernet Sauvignon clone is isolated from the Harlan Estate and, on this site, delivers a red-fruited, Christmas spice character with unexpectedly soft, plush tannins—a departure from the more structured profile typically seen from high-elevation sites. The nose is gorgeously savoury, with loamy earth, black truffle, blackberry, cassis, walnut, and rich smoked paprika, lifted by spearmint, cinnamon, and clove. Medium- to full-bodied, the palate is framed by plush tannins that offer some grip but melt away beautifully, supporting the rich dark fruit character. The finish is exceptionally long, with great tension and balance—a well-built, delightful wine.

Almost entirely estate grown, Rombauer's 2021 Cabernet Sauvignon does include a bit of purchased fruit from Blair (Calistoga) and Renteria 360 (Oakville). Marked by scents of cherries, cedar and dusty earth, this wine is full-bodied, supple and silky, with softly dusty tannins on the finish.
