The fruit for this 2021 Vermentino was handpicked, whole-bunch pressed, fermented wild with no acid additions and matured for four months on the lees in stainless steel. This is textural, and the impact of the time on lees is evident in the chalky/waxy texture in the mouth. There is lemon verbena, thyme, crushed rocks and green apples. It's very good-neutral and fresh and good.
