Pale yellow with soft green nuances. On the nose, it has notes of tropical fruits, such as lychee and passion fruit.
Fresh in the mouth, it has intense acidity, mineral notes, exquisite texture and creaminess. Long and persistent finish. Pair with oysters and lobster, salad and octopus carpaccio.

The young and pristine 2022 Nimbus Sauvignon Blanc is very pale and has a pungent nose with good ripeness and 13.5% alcohol and very good acidity. Reading the technical sheet, I was surprised to find out that there is 7% Chenin Blanc in the bottled wine! 42,000 bottles produced. It was bottled in August 2022.
