Firm and well-knit, this lacy version offers a subtle mix of Dijon pear, smoke, fleur de sel, fresh ginger and slivered almond notes. The wine is soft and rounded although unmistakably from Chardonnay in the chalky Côte des Blancs. Crisp apples have a light creaminess as well as lively acidity.

The NV Brut Blanc de Blancs Cuvée Cuis 1er Cru is terrific. Bright and nervy, as these wines are, the Cuvée Cuis also has a good bit of depth to round out the contours. Lemon peel, almond and dried flowers all add nuance throughout. This is an especially open-knit edition of the Cuvée Cuis, which is just fine, as this wine can be a bit angular upon release. Dosage is 6 grams per liter. Disgorged: May 25, 2018.

Disgorged in December 2019 with four grams per liter dosage, the NV Brut Extra Blanc de Blancs 1er Cru is based on the 2016 vintage, complemented by reserve wines from 2014-2010. Offering up aromas of honeycomb, citrus zest, freshly baked bread and crisp orchard fruit, it's medium to full-bodied, crisp and precise, with tangy acids and a delicate pinpoint mousse. This displays all the Gimonnet elegance, even if it strikes me as a touch less intense than the last few disgorgements.

The first selection from the house, the NV Champagne 1er Cru Blanc de Blancs Cuis Brut is 70% from the 2020 vintage with the addition of reserve wines spanning from 2013 to 2018, and it was raised without the use of barrels. Pouring a brilliant silver/straw hue, the NV Champagne 1er Cru Blanc de Blancs Cuis Brut is elegant if not a touch subdued on opening, with fresh notes of crushed seashells, ripe apple and lime pith. Fresh and inviting on the palate, it's approachable and clean, with a fluffy mousse and grapefruit-noted citrus through the finish. An easygoing style, it would be exceptional paired with oysters and enjoyed over the near to mid-term. Drink 2023-2027. Disgorged October 2022.
